Festive Steamboat Soup

Evaporated Filled Milk
Ingredients
Auspicious Imperial Broth
1.2kg chicken carcass, blanched
2 tbsp (30g) white peppercorn
25 pcs (60g) chinese herb “Solomon’s Seal” (Yuk Chuk)
10 pcs (40g) red dates
800g Chinese turnip, cubed
1/2 Chinese cabbage (400g)
5 litre water
1¼ tbsp salt
1¼ tbsp white pepper
1 can MARIGOLD Evaporated Filled Milk
1 tbsp (20g) groundnut, boiled
1 tbsp (20g) black-eyed peas, boiled
1 tbsp (20g) Chinese barley, boiled
1 tbsp (20g) black beans, boiled
1 tsp (3g) goji berries
Method

Place chicken carcass, white peppercorn, cabbage, “Solomon’s Seal”, red dates and Chinese Turnip into a stock pot.

Add water and bring to a boil. Simmer for at least 4 hours.

Pour the broth through a strainer and discard the strained items. Pour the broth back into the pot. Add groundnut, black-eyed peas, Chinese barley, black beans and goji berries. Season to taste with salt and pepper. Add MARIGOLD Evaporated Filled Milk and bring to a boil.

Pour finished broth into the steamboat pot.
Chef's Tips
Chicken feet can be used instead of chicken carcass as it contains collagen which gives the broth a richer mouth feel.

1½ cups oil
30 pcs (500g) prawn
3 tbsp chilli powder
1.2kg red snapper
6 pcs (700g) tomatoes
3 stalks (100g) spring onions
20 pcs red chili padi
8 pcs red chili
5 pcs (700g) yellow onion
2-inch (300g) ginger
1 cup (200g) garlic
6 litres water
Scarlet Treasure Broth
5 litres broth base
2 cups (300g) light soy sauce
3/4-inch (100g) ginger
6 tbsp (90g) salted vegetables, sliced
2 pcs (20g) preserved plum
1 tbsp coriander, chopped
2 tsp white pepper
1 can MARIGOLD Evaporated Filled Milk

Method for Broth base

Pour oil into a pot. When it’s heated, sauté prawns with chili powder till fragrant. Add remaining ingredients except water and cook for another 5 minutes.

Add water and bring to a boil. Simmer for 2½ hours. Pour the broth through a strainer and discard the strained items.
Method for Scarlet Treasure Broth

Add all ingredients into the pot except MARIGOLD Evaporated Filled Milk. Bring to a boil and simmer for 3 minutes.

Add MARIGOLD Evaporated Filled Milk.

Chef's Tips
Golden snapper can be used to replace red snapper.
